Mini breakfast burritos
Whenever I have leftover tortillas I like to use them for breakfast meals. Here's one of my favorites.
Two eggs with a dash of salt and pepper. Add your favorite mild or hot salsa or picante about 1/4 cup
A dash of cream or milk
Scramble with a whisk until fluffy then add 2 TBS. Of Mexican crumble cheese mix in lightly.
Add to a medium heated skillet (non stick) otherwise use cooking spray.
On another preheated pan ( I use a cast iron griddle) warm tortillas
When eggs are fully cooked add them to the warming tortillas.
Once tortillas are slightly browned remove and plate.
Add extra Mexican crumble cheese and hot sauce roll up and serve.
