Ingredients:
- 2 Thin sliced chicken breasts
- 2 large Yukon gold potatoes, diced
- Coleslaw kit - add 1/2 apple diced with a dash of salt and pepper.
- 1/4 cup Vegetable Oil
- 1 tsp Paprika
- 1 Beaten Egg
Flour Mixture:
- 2 Tbs Flour
- 1 tsp Paprika
- 1tsp Garlic Powder
- 1/2 tsp Salt and Pepper
- 3/4 cup Panko Bread Crumbs (comes in later, see directions below)
Directions:
Preheat oven to 450
Take diced potatoes and drizzle with olive oil, salt, and pepper, 1tsp of paprika toss then place on foil-covered baking sheet bake 20 minutes.
In a deep dish pan heat 1/4 cup vegetable oil
Dredge chicken in flour mixture
After dredging chicken, dip cutlets in a beaten egg in a separate bowl add 3/4 cup of panko crumbs to flour mixture then gently roll chicken in the panko crumbs. Add chicken to oil medium heat for 4 minutes on each side.
