Mo Reese’s Zucchini Bread

XCOOKING

This recipe makes 2 loaves.

Ingredients:

3 cups - all-purpose flour 

1 tsp - baking soda 

1 tsp - baking powder 

1 tsp - ground cinnamon 

1 tsp - salt 

2 cups - sugar 

1 cup - vegetable oil 

3 large eggs, beaten 

3 cups - grated zucchini 

Instructions:

1. Preheat the oven to 325 degrees. Grease two 5-by-9-inch loaf pans.

2. In a mixing bowl, mix together the flour, baking soda, baking powder, cinnamon & salt.

3. In a separate bowl mix the sugar, oil & beaten eggs, then add to the flour mixture. Stir in the grated zucchini.

4. Pour the batter into the loaf pans & bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.

5. Cool for 10 minutes then remove bread from pans. Cool bread completely on wire racks
