The Honey Puff Pancake

Cool time: 18 mins
Yields: 8 servings
- 1 c. All Purpose Flour
- 1 c. Milk (2%)
- 6 Large Eggs
- 3/4 tsp. Baking Powder
- 1/4 tsp. Salt
- 4 oz. Reduced Fat Cream Cheese
- 1/4 c. Honey
- 1 tsp. butter (for pan)
- Lemon juice
- Powdered sugar
Step 1: Take a 12-inch cast iron skillet, put it in the oven, preheat to 425°. NOTE: it’s super important to preheat the pan with the oven!
Step 2: Blend all ingredients in a blender or food processor. Make sure to scrape down the sides and get it all mixed together.
Step 3: After oven is preheated, remove pan and put in the butter to coat pan. It will sizzle and turn brown immediately.
Step 4: Pour batter into pan and bake for 18 mins. or until top is golden brown and the pancake has risen. NOTE: the pancake rises differently every time.
Step 5: Remove from oven and slice into 8 slices.
Step 6: Top with lemon juice and powdered sugar to make a glaze, enjoy!!
Whenever I have industry friends stay with me, I always make this in the morning. I swear people stay over more for this than for me!
It’s easy prep, easy clean up, and I can talk to everyone while making it without getting distracted.
By the time I’m done making coffee and tea, it’s ready to serve up and enjoy!
