No Bake Energy Bites
Ingredients
2 cups of oats
1/2 cup honey
1/2 cup peanut butter
1/2 cup chocolate chips (I use white chocolate)
1/2 cup ground flax seeds
1 tablespoon chia seeds
1 teaspoon vanilla extract
- Mix everything together in a bowl.
- Cover and chill in the fridge for 30 mins.
- Roll mixture into small 1 inch balls.
- Store in airtight container in fridge for up to 1 week.
- Grab a few when you are feeling hungry.
I was given this recipe by my lactation support centre for something tasty, quick and for energy, whilst I’m breastfeeding my baby. Some of ingredients contained - oatmeal, flax seeds and chia seeds - are especially good for milk supply as they are thought to enhance the breast milk production rate naturally.
The original recipe used dark chocolate chips and unsweetened coconut flakes. I swapped out dark for white chocolate, and replaced 2/3 cup of coconut flakes with 1 extra cup of oatmeal. They are vegan and gluten free.
If you like Reese's Peanut Butter Cups these are a slightly healthier version and for me just as tasty. Well ok not as tasty as the white chocolate Peanut Butter Cups but a nice alternative.
